I am a self proclaimed pancake junkie! I haven't met a pancake I didn't like. I like to google pancake recipes because I am always looking for some new & exciting ways to eat one of my favorite foods. I came across this bananas foster recipe awhile back & we've now enjoyed in on pancakes on more than one (okay, more than a few) occasions! Aside from pancakes this would be great on waffles, french toast, crepes, by the spoonful....
Without delay, on to the recipe!
In a saucepan mix:
1/2 c butter
1/4 c packed brown sugar
1/2 tsp cinnamon
1/2 c maple syrup
1/4 to 1/2 tsp rum extract
Cook for 2 to 3 minutes, on medium-high heat, while stirring constantly. Once all the sugar has melted & the mixture is starting to thicken add 3-4 bananas. Reduce heat to medium & add the bananas. Cook for about 3-4 more minutes.
